The Short Answer: Shade-grown coffee is coffee that is grown under a canopy of trees rather than in a cleared field. Most modern coffee farms cut down forests to plant high-yield "sun-grown" bushes, which destroys habitats. When you clear-cut a forest to grow coffee, you get more beans, but you lose the ecosystem. We would rather pay more for a smaller harvest if it means the Yellow Warblers and Purple Martins have a place to land when they fly south for the winter. 

Insects such as bees, help to pollinate trees, flowering plants (including coffee!) while predators keep insect pests that might otherwise harm production in check.  Birds are one of these predators in  the shaded canopies that help to eat coffee pests and larvae.
