We bring our philosophy on dark roasting to the decaf world with this one. We take extra time in the roaster to allow the caramelization of sugars to occur, leading to a sweet cocoa-like flavor that lasts and lasts.
Meticulous attention is paid during the roasting process, as the delicate nature of dark roasting decaffeinated coffee can lead to disastrous results otherwise.

Frequently Asked Questions
Is Swiss Water Process the same as Mountain Water Process?
They are very similar. Both use water and carbon filters rather than chemicals. "Swiss Water" is a trademarked process based in Canada, while "Mountain Water" is a specific process based in Mexico using glacial water. Larry's uses these methods because they align with our organic values.
Does mountain water process decaf have caffeine?
Mountain water process decaf contains trace amounts of caffeine. Both Swiss Water® and Mountain Water Process remove 99.9% of the caffeine. A standard cup might have 2–5mg of caffeine, compared to 95mg+ in a regular cup.
Why does chemical-free decaf matter?
The short answer: not all chemical residues are removed during the traditional decaffeination process and those chemicals will end up in your cup
Most conventional decaf coffee is made using chemical solvents like methylene chloride (a component in paint stripper) or ethyl acetate. While these chemicals are rinsed off, the process often strips away the natural oils and distinct flavor profiles that make specialty coffee taste good.
At Larry’s, we believe if you’re going to the trouble of sourcing 100% Organic, Fair Trade, Shade-Grown beans, you shouldn't bathe them in chemicals. That’s why we exclusively roast beans decaffeinated using water processes. It keeps the "organic" promise intact and ensures your cup tastes like actual coffee, not a chemistry experiment.
How Long Do Roasted Coffee Beans Stay Fresh?
Roasted coffee stays fresh for about 90 days after roasting. Thanks to modern packaging (like our foil bags with one-way valves), your beans don't turn into pumpkins at midnight.
"Peak Flavor" usually starts about 7 days after roasting when the beans have had time to degas and begins to fade after about the 45 day mark. During this window is when all the yummy oils are popping with flavor and you can still get the more delicate floral notes.
Day 45 to 90 the coffee is still amazingly delicious buy you may have lost those lighter notes and you'll be tasting the more rich tones like chocolates and malt, and nuttiness.
You'll want to drink everything up before you get to 120 days because that's when flavors start to be more muted and if you've still got a bag after one year you can still use them but they just won't taste as good. After that, it's time for new beans.
How Do I Keep Roasted Coffee Fresh?
To keep roasted coffee fresh, you'll want to keep it in an airtight container and only grind it when you're ready to brew. That will keep your coffee at peak freshness.
If your coffee is pre-ground that's no problem, just be sure to keep it in an airtight container and in a cool dry place.
If you'll be away for a long time, freezing your coffee preserves it's freshness for months at a time.
Does Larry's Coffee Use Shade Grown Coffee?
Yes, Larry's Coffee does use shade-grown coffee beans for it's coffee.
What is Shade-Grown Coffee and Why Does It Taste Better?
Shade-grown coffee tastes better because it grows slower. Just like a tomato that ripens slowly on the vine tastes sweeter than one force-grown in a hothouse, coffee cherries grown under a forest canopy take longer to mature. This extra time on the branch allows the bean to develop more complex sugars, deeper flavors, and a richer body. Mass-market "sun-grown" coffee is blasted with heat to ripen fast, resulting in a flatter, more bitter cup.
Is Larry’s Coffee Fair Trade Certified?
Yes. Every single bean we roast is 100% Fair Trade Certified. But honestly? That’s just the starting line. While "Fair Trade" ensures a minimum price floor for farmers, we go further by being members of Cooperative Coffees. This means we don't just buy from farmers; we sit at the table with them. We trade directly, pay premiums above the Fair Trade minimum, and build decades-long relationships that protect the land, the growers, and the quality of your cup.
Where is Larry's Coffee Roasted? (And Why That Matters for Freshness)
We roast every single bean right here in Raleigh, North Carolina. Specifically at our dedicated sustainable facility in the Five Points neighborhood (1507 Gavin Street, to be exact). We roast every day, Monday through Friday. This means if you live in the Triangle, your beans were likely spinning in our drum less than 48 hours before they landed on your doorstep.

How can I cancel my subscription?
You're in control. No contracts, no long-term commitments. We'll never lock you in to a subscription you can't get out of, so we made it super simple to cancel, all online (of course you can call us if you want!).

You will then have the option to click 'Cancel' or make any additional changes to your subscription order, such as skipping a delivery, pausing your subscription, rescheduling, or changing your roast.
What if I don't use it fast enough?
Easily pause, skip, or delay your next order. You’ll never end up with more coffee than you want.
What happens if I run out of coffee before my next order?
If you see you're running low and your next order isn't set to ship in time you can quickly and easily login and select "Send Now" to automatically process your next order and get it shipped out to your ASAP.
Then changing the frequency of your order is just as easy under “Manage Subscriptions."
How often will my subscription arrive?
Your subscription will be shipped according to the schedule you selected when you first started your subscription - the options being every 1, 2, 3, 4, or 6 weeks.

There are no limits to how often you change up which blend or bag size you get each delivery and changing is simple in your customer portal.

How will I know when my next order is coming?
3 days before every subscription order is set to charge your account, you will receive an email notification so you can make any changes you need like swapping blends, rescheduling, or skipping.

Skip a shipment and put a delay on the next order so you're not getting any coffee when you're not at home.
Or, if you're gone for an extended time, you can change your shipping address and we'll send you your bag anywhere in the continental U.S.!
