Our partners in the farming cooperatives of Guatemala entered the fair trade coffee market in the final days and aftermath of the country's long and brutal civil war. We were one of the first companies in the USA to import fair trade organic coffee from the Chajul region in western central Guatemala, and our relationship has paid excellent dividends in this quality coffee.
It's a bright and sweet coffee, with a snappy hint of coffee fruit in the cup, a wonderfully smooth medium body, and a deliciously chocolaty finish. Our roasting style on this one is firm yet gentle, guiding the coffee quickly to the point of sugar browning, but light enough to illuminate the luscious acidity so prized in Guatemalan coffees.
